Soft red wheat flour is a low to medium protein wheat (11%) used just like All-Purpose Flour.
Back to the Basics 101's soft, red wheat is grown, by the Butt's family, in Bleckley County, Ga. After harvest, they take the whole wheat berries, drive 1-1/2 hours to Junction City for Fielder's Mill to grind into flour. Fielder's Mill's process for grinding is to lift the gate to their pond so the water rushes and turns the turbine which moves the 4 foot stone mill into motion. This produces “virgin” whole-wheat flour.
